The source of the nectar collected by the bee influences the flavour of the honey we consume. Generally speaking, the lighter coloured honeys are milder than darker honeys. Much of the honey on sale on the supermarket shelves is a blend of different honeys, but single source honey (acacia, heather, orange blossom, to name but a few) is in high demand, and each nectar source will produce its own distinctive flavour.
